Oatmeal Peanut Butter Cookies Recipe

When Christmas Eve rolls around this year, don’t forget to set out that delicious plate of treats for Santa (with a cold glass of milk, of course!) This is one that Santa (and the rest of the family) is sure to love. These Oatmeal Peanut Butter Cookies would be perfect for a cookie exchange or bake sale as well.

I prepared these Oatmeal Peanut Butter Cookies with “better for you” ingredients like whole wheat flour, coconut oil, organic peanut butter and oats. But there was no scrimping on taste whatsoever; my family went wild over these cookies with such phrases as, “Melts in my mouth!” and “Amazing!” I think you’ll love them too…just don’t forget to leave a few for Santa!

Oatmeal Peanut Butter Cookies

Ingredients

  • 1/2 cup coconut oil
  • 1/2 cup butter (1 stick), softened
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 1 cup peanut butter (I used organic version, just nuts & salt)
  • 2 eggs
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup unsweetened coconut
  • 1 cup quick-cook oats

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream together coconut oil and butter until blended.
  3. Add brown sugar and white sugar and mix until creamed.
  4. Add peanut butter and mix well.
  5. Add eggs, beating after each.
  6. In a separate bowl, combine flour, baking soda, salt and coconut. Mix well to combine.
  7. Add dry ingredients to wet a little at a time, mixing well after each addition.
  8. Mix in dry oats.
  9. Use a tablespoon to drop dough onto ungreased cookie sheet.
  10. Bake 10-15 minutes until cookies are lightly browned. Watch to make sure they do not overcook.

With four young kids at home, it sometimes seems inevitable that someone is going to bring home a sickness and it will run rampant through the family. And medication, doctor’s visits, missed days at work and prescriptions just cost money that I’d rather be spending somewhere else! Fortunately we’ve been avoiding illness or at least nipping those coughs and sniffles quickly with a few easy tricks. Simple things like removing shoes before coming into the house, changing out of school clothing right away, hand washing and not sharing cups go a long way towards not spreading sickness. Wash Your Hands

A no-brainer, right? Frequent hand washing is an ideal way to keep germs from transferring. Kids need LOTS of reminders for this one though. Wash your hands immediately upon coming home, before you touch anything. Wash your hands before cooking or eating. And certainly, wash your hands after using the toilet, coughing or sneezing.

No Sharing!

No sips from someone else’s cup or straw! No bites using someone else’s fork or spoon! Want to share an apple? Cut it in pieces so you aren’t biting from the same fruit. Eliminate the “Is this glass mine?” issue by giving each family member a labeled cup (either personalized with their name or with a particular image) so they won’t get mixed up.

Remove Your Shoes

With a crawling baby in our house, keeping the floors clean is important to me. But even if you don’t have a little one on the floor, you’d be shocked to see how much dirt comes in to the house on the soles of your shoes. We remove our shoes every time we come inside. In fact, we don’t even keep the shoes inside the house anymore. They are all stored in bins on a shelving unit in the garage. We put our shoes on when we leave the house and wear slippers or socks inside during cool weather. Keeping shoes outside eliminates transferring bacteria onto the floors and helps keep the carpets looking new as well.

Change of Clothes

Another way we eliminate transferring of germs is by changing our clothes when we come home. When our kids have been at school or playing at the park, we have them take off dirty clothes, bathe and change into clean clothes. We don’t want germs that linger on clothes transferred to sofas, carpet or bedding! Dirty clothes are moved into the laundry room daily.

Daily Cleaning

A daily cleaning doesn’t have to take long. We are able to tackle the basic jobs in about 30 minutes a day and have a very clean house. For most of our cleaning tasks we use distilled white vinegar in a spray bottle, Castile soap, baking soda and microfiber rags. Distilled white vinegar inhibits the growth of mold, mildew, and some bacteria, such as E. coli and salmonella…plus it’s really inexpensive! Be sure to empty trashcans daily if a sick family member is filling them up with used tissues.

Wipe Down

Think about the hundreds of times things are touched in your home before they get cleaned. Use your vinegar spray to moisten a damp microfiber rag and wipe down doorknobs and light switches. Appliance handles, remote controls, cell phones and tablets too! Shake your computer keyboard out over the trash to remove crumbs and dust then carefully wipe the keys. Don’t forget to clean the mouse!

Launder Linens & Towels

I wash sheets and pillowcases once a week, blankets every two weeks and comforters once a month. When we have someone who is under the weather, I have a more frequent routine of changing of their pillowcase and I refresh it every day, especially if they have a runny nose or cough (who wants to sleep on a snotty pillowcase, ewww!) Remove and wash sofa pillows as well if your family uses them to rest their head. I also change out the hand towel in the bathroom daily and if someone is already sick, they should use their own hand towel.

Quarantine

Despite all your efforts, sometimes someone just comes down with a resilient bug. To avoid illness from running through the family, move swiftly to contain it and quarantine the sickie!

Last year as soon as we noticed that my son was coming down with a stomach bug, we immediately kept him separated from the rest of the family. This meant, he stayed in bed with the door shut so he could get plenty of rest. We kept him well-hydrated and I changed out and washed his bedding daily. So the illness wouldn’t spread, we didn’t allow the other children to go into the room. And each time I went in to help him, I would immediately wash my hands afterwards. We avoided anyone else catching the bug, hurrah!

Eat Well & Take Your Daily Vitamin

Oh sure, the holidays are coming and that means rich foods and extra dessert. You can still indulge on those special occasions but continue to fill yourself with healthy greens and lots of fresh fruit the rest of the time. I’m all about sneaking in the leftover greens into my breakfast smoothies. I just freeze the greens and stuff a handful into the blender cup. Add in almond milk and frozen fruit (I like pineapple, bananas and cranberries) and you won’t even taste the green stuff!

Last week we had our first hint of fall here in Southern California. Temperatures dropped from the high 90s and we were blessed with several cool days. I struggle to cook in the summer months because it’s just so darned hot in my little house without air conditioning. And I sure do get bored eating salad at every meal! As soon as I felt a cool in the air, I delighted in baking chocolate chip cookies and made a delicious pot roast in the Dutch oven. I also made a family favorite, my roasted garlic and rosemary potato soup recipe.

I’ve been making this soup for years, much to the delight of my family. I like that I can prepare the potatoes ahead of time and then put together the soup quickly for dinner.This soup is appropriately creamy and flavorful with a wholesome thickness but without the guilt that creamy soups usually have. You know, like tons of butter and cream? Not here!

No butter or heavy cream in this one, just a little bit of half and half. The thickness comes from the potatoes themselves, pureed into the base inside your blender. Couldn’t be easier! And if you wanted to make it even more of a healthy dish, you could replace the half and half with milk instead.

This soup is wonderful served as a meal of its own or alongside a fresh green salad, turkey sandwich or just a piece of buttered bread (that’s how I had it!) We had a small amount left over for lunch the next day so I warmed it back up in a pot with a drizzle of milk to thin it and it reheated back up nicely. Mmmm, such a warm and cozy fall meal, I think you’ll love my Roasted Garlic and Rosemary Potato Soup Recipe!

Roasted Garlic and Rosemary Potato Soup Recipe

Roasted Garlic and Rosemary Potato Soup Recipe

Ingredients

  • 6 Yukon Gold potatoes
  • 1/2 large onion, chopped
  • 2 tsp fresh rosemary
  • 1 large bulb garlic
  • 1 Tbsp olive oil
  • 14 oz chicken broth (or one bouillon cube dissolved in 2 cups of water)
  • 1 Tbsp flour
  • 1/4 tsp pepper
  • 1 cup of half and half

Instructions

  1. Preheat oven to 400 degrees.
  2. Peel and cube three of the potatoes and place on one side of a 9" x 2" pan.
  3. Cube the remaining three potatoes with the skin on and place those on the other side of the pan (peeled potatoes on one side, unpeeled on the other).
  4. Sprinkle chopped onion and snipped rosemary across the top of the potatoes.
  5. Peel off the dry outsides on the garlic bulb. Cut across the top, leaving the bulb intact but exposing the cloves. Place upright in the center of the pan.
  6. Drizzle oil across the top of garlic and potatoes.
  7. Cover with aluminum foil and bake for 50 minutes. Set aside to fully cool.
  8. Squeeze the garlic paste from the bulbs into a high-powered blender.
  9. Add peeled potatoes, half the onion, half the broth and all of the flour and pepper into the blender.
  10. Blend until nearly smooth.
  11. Pour into a medium saucepan and add in unpeeled potatoes, rest of onion and broth. Add half and half.
  12. Cook until bubbly and warm.

Living in San Diego, we don’t have to drive far to find great adventures! Our summer plans include visits to the beach, local amusement parks, museums and even a drive to the mountains for a hike.  I bought my car brand new almost 12 years ago. It has over 140K miles on it and still runs great! Regular maintenance and oil changes is key, of course. Here’s how we have fun on our day trips, what we pack in the car when we hit the road and how the Walmart Auto Care Center gets the car in top shape.

Where To Go

You don’t have to go far to find family fun. Check local activities in your area for a great day trip, some place you can drive to and return home in the same day. Even if it’s just a nice picnic spot in a park, make a day out of it by bringing some outdoor games like a frisbee with you. Or grab a favorite board game and enjoy playing on the grass. We like to head out into the mountains for an afternoon fishing at the lake.

Have everyone in your family give some input on a place they’d like to go and then choose one each week until you’ve covered them all! My big kids wanted to play baseball at the park, I wanted to wander through Old Town San Diego and my little one wanted to swim at the bay. We’ve covered all three this summer and still have a few more fun day trips planned before school starts up!

What To Bring

Depending on where you’ll headed, your day trip packing list may vary. I have written this checklist on Traveling Mom for essentials everyone should pack with them in their bag. I keep a fabric bin in the trunk that’s loaded with day trip needs so I’m always ready and I can save myself some time.

If you’re going to be gone all day and would like to budget your meals, make sure to pack snacks and lunches to avoid having to make a costly stop for fast food. Bottled water is a must and I plan on three different snacks per person for the entire day. We like to choose snacks that can handle the heat inside the trunk, like nuts, dried fruit, apples and crackers. If you bring a lunch that needs chilling, place a small cooler in the car with a freezer chill pack that will keep everything a good temperature.

Don’t forget a towel, waterproof blanket or beach chairs to sit on. A disposable tablecloth is a good idea if you are going to be dining al fresco (picnic tables aren’t always the cleanest). On that note, bring hand sanitizer too, in case you aren’t able to wash hands before eating.

If you’re going to be gone until sunset, take note of the weather and bring a jacket if necessary. I like to bring my kids at least a clean shirt and shorts to put on at the end of the day so they aren’t sitting in the car wearing sweaty and dirty clothes! Bring a big plastic bag to throw everything in at the end of the day and pop it in the trunk to clean out when you get home. This will help you keep all the mess in one place.

We cook 99% of our meals at home, by scratch and on a budget. This means a few things – With 5 eaters to please, it can be a challenge to make a meal that everyone will enjoy (keeping in mind the “I don’t want onions in mine” concerns!) I recently had the chance to try out MasterPan for dinner last week. I was intrigued by it and hoped (fingers crossed!) that it would make dinnertime a little easier as in I could keep certain foods separated and at the same time only dirty one pan. Will it work on one burner? – Yes, only one burner is needed to cook. The  center of the MasterPan is the hottest cooking area but the heat flows through the rest of the pan to heat the outside compartments as well.

Timing your foods to be done at the same time is one of the usual challenges of cooking. I liked that the outer compartments on the MasterPan heated slowly so I was able to add everything to the pan at once and with a few turns on the sausages and some shifting of the onions and peppers, everything cooked evenly and stayed warm.

What about the oven? – Yes, you can use it in the oven. It’s oven safe to 350* for one hour.

How big is it? – It’s a large pan (14.9″ x 21.75″ x 1.75″). I think it would be great for college students or for keeping in the RV; any place you’re cooking where space is at a minimum and having one great pan like this versus five individual pans makes sense.

One of the compartments is on the smaller size. I originally had placed the red peppers here and the onions in the larger section. Once the onions cooked down a bit and were smaller, I easily exchanged their places to allow the red peppers more space to cook.

How easy is it to clean? – Super easy! It’s made of quality nonstick (not Teflon) and there was no hard scrubbing after cooking our meal. And it’s dishwasher safe, so that’s even better!

So how did MasterPan work for our dinner? It was a success! With the burner on medium heat, as suggested, the sausage cooked nicely on the stove top. The potatoes warmed and crisped up a bit with a little oil and the peppers and onions sauted along with the sausage. The compartments were a bit on the smaller side for our big family but I think the pan would be perfect for portion control if I was cooking for fewer people.

I received an Undercover Mama to review and chose navy blue as a good neutral that could be worn under my darker t-shirts. The Undercover Mama is $24.99 each but a “value bundle” in choices of basic black and white are two for $40. I appreciate the ease of how the Undercover Mama works and how discrete I can nurse the baby without exposing my entire hip and side. I wore my navy blue Undercover Mama for several weeks to test it and one day I noticed that the hook on one side had fallen off. I was able to easily contact the company and they sent me a new tank (in white). I’ve been wearing this white Undercover Mama several times a week for a few weeks and haven’t had any issues. In fact, I now wear it any time I know I’ll be nursing in public. I’d absolutely purchase Undercover Mama! (their polka dot version is pretty cute!)

What I Loved

  • No more flashing my “love handles”!
  • It was very easy to connect to my nursing bra.
  • The variety of colors available.
  • Can continue to wear with a regular bra as a layered tank after you are done nursing.

What I Didn’t Love

  • Despite ordering based on the sizing chart, my shirt was still a bit snug. The website does say that the Undercover Mama is intended to fit snugly but because it seemed to be on the smaller side, my navy blue tank tended to roll and bunch up at the bottom. My replacement white tank was one size larger and it fit much better.
  • I would have liked the fabric to be stretchier, especially around my hips.
  • Wearing two layers (the Undercover Mama underneath my regular tee) is a little warm during hot weather.
